Ingredienti:

180 g di prosciutto novello

0,5 dl d'olio

5 g di sale
Tagliare a dadini il prosciutto, metterlo
nell'olio bollente e farlo rosolare un pochino. Sbattere le uova in un
piatto, salarle e aggiungerle al prosciutto rosolato. Friggere a fuoco
lento e servire caldo. Far attenzione prima di aggiungere il sale
perche' il prosciutto e' gia' per se stesso salato. Allo stesso modo si
possono preparare frittate col lombo stagionato, con le salsicce o con
la pancetta.

Fritada con asparagi verdi |
Ingredienti:
- 500 g d'asparagi verdi

150 g di cipolla
-
8 uova
-
0,5 dl d'olio
-
10 g di sale
-
1 g di pepe
Rompere con le mani a piccoli pezzi
(circa 3 cm) la parte tenera degli asparagi, precedentemente lavati.
Tritare finemente la cipolla e farla rosolare per bene nell'olio.
Aggiungere gli asparagi, il sale, il pepe e lasciar cucinare, finchè gli
asparagi non diventeranno teneri. Infine aggiungere le uova sbattute,
mescolare e, quando le uova saranno cotte, togliere dal fuoco e servire
caldo.

frittata con asparagi verdi. Tamaro (Tamus communis) e' una pianta
spontanea che si raccoglie in primavera. |

250 g di cipolla novella

0,5 dl d'olio

2 g di pepe

5 g di sale
Pulire la cipolla, tagliarla ad anelli e
farla rosolare nell'olio. Aggiungere il sale, il pepe e le uova
sbattute. Mescolare un pochino e, a fine cottura delle uova, servire.

Fritada de germogli d'aglio giovane

Ingredienti:
- 8 uova

200 g di germogli daglio

0,5 dl d'olio

2 g di pepe
- 5 g di sale
Tagliare a pezzettini i germogli d'aglio,
metterli nell'olio bollente e lasciarli rosolare un pochino. Aggiungere
il sale, il pepe e le uova sbattute. Cuocere a fuoco lento, finche le
uova non saranno cotte.

Fritada col radicio salvadigo

Ingredienti:
- 500 9 di radicchio
selvatico

50 9 di pancetta (hamburger)

6 uova

0,5 dl d'olio

100 g di ciPolla novella
-
10 g d'aglio
-
2 g di pepe
-
10 g di sale
Pulire e lavare per bene il radicchio
selvatico e lasciarlo cucinare nell'acqua bollente salata per circa 10
minuti, poi scolarlo. Far rosolare nell'olio la cipolla tritata
finemente e la pancetta a dadini. Aggiungere il radicchio scolato,
l'aglio tritato, il pepe e il sale. Mescolare il tutto e versare le uova
sbattute. Quando le uova saranno cotte, servire come antipasto caldo.

- 5 g di sale
Tagliare finemente la radice di sedano
e farla rosolare un po' nell'olio. Aggiungere l'acqua fino a coprire
il sedano e lasciai cuocere lentamente, aggiungendo di tanto in
tanto un po' d'acqua, finche' il sedano non sarà tenero. A cottura
ultimata l'acqua dovra essere completamente consumata. Aggiungere un
po' di sale, di pepe e le uova sbattute e friggere finche' le uova
non saranno cotte.

Fritada coi funghi porcini
|

Ingredienti:
- 8 uova

1 dl d'olio
-
600 g di funghi porcini
-
2 g di pepe
-
150 g di cipolla
- 5 g di sale
Far rosolare nell'olio la cipolla tritata
finemente e, quando questa sarà ben rosolata, aggiungere i funghi
tagliati a fette. Coprire e cucinare, mescolando di tanto in tanto.
Quando i funghi saranno teneri e l'acqua dei funghi sara' completamente
consumata, aggiungere sale e pepe e versare sopra le uova sbattute.
Friggere finche' le uova non saranno cotte. Servire caldo assieme
all'insalata verde. Allo stesso modo si possono preparare varie qualità
di funghi. I più comuni in Istria sono: il gallinaccio, il prataiolo, il
titola bicolare, il porcino, l'ovolo buono ed altri. |

Versare nell'olio bollente le uova
sbattute, il tartufo tagliato a fette sottili e condire il tutto con
sale e pepe. Quando le uova saranno cotte, cospargere con il prezzemolo
tritato e servire.

Frittata con i tartufi # 2 |
Ingredienti:
- due uova a testa,
- olio,
- tartufo
Sbattete le uova in un piatto con il sale. Aggiungete il tartufo affettato e
salato. Riscaldate l'olio in una padella, cuocete le uova e aggiungete alla fine
un pizzico di pepe. Servite caldo.

Istrian Fritada with truffles # 3
|
Ingredienti:
- 8 eggs

80 g truffle slices
- 50 g Istrian prosciutto
-
1 dl Truffle-flavoured olive oil
- Parmesan cheese
- Salt
Beat eggs. Chop prosciutto into small
pieces, then braise in oil. Add truffle slices (tartufete); then braise
5-6 minutes on reduced heat. Add 2 small spoons of truffle-flavoured
olive oil and beaten eggs. Add salt to taste. Cook until the eggs are
done - softer or harder, according to your taste. Sprinkle Parmesan to
taste and serve warm.
Serves 4.

Per la preparazione delle lumache vedi il
N. 26. Far rosolare nell'olio la cipolla tritata finemente e, quando
sarà ben rosolata, aggiungere un trito d'aglio e le lumache già pronte.
Cucinarle per circa 5 minuti, aggiungere il sale, il pepe e versare le
uova sbattute. Lasciar cuocere il tutto e poi servire.

- 10 g di foglie di sedano
- 1 dl d'olio

Far rosolare un pochino nell'olio la
cipolla tritata. Aggiungere i pomodori tagliati, le foglie di sedano
trite, il sale e il pepe. Coprire e cucinare, finche il liquido non sarà
consumato. Versare le uova sbattute, mescolare un po', quindi servire.

Fritaja (kajgana) od divljih šparoga u košarici od tijesta
|
Sastojci:

Opis:
Mekani dio opranih divljih šparoga iskidati na
sitnije komadiće dužine oko 3 cm. Šparoge pirjati u maslinovom ulju na laganoj
vatri dok ne omekšaju, posoliti i popapriti, zatim dodati razmućena jaja i
pomiješati. Kada se jaja skrutnu skinuti s vatre i toplo poslužiti u košarici od
tijesta. Dekorirati.

Spinach omelette (Fritada coi spinasi)
|
Ingredients:
- 1 pound spinach
- 2 tablespoons butter
- 1-1/2 tablespoons olive oil
- 1 tablespoon finely chopped parsley
- 1/2 medium onion, finely chopped
- (Water)
- 6 large eggs
- Another 2 ounces butter
1. Break off and discard the spinach stems. Tear
large leaves into 2 or 3 pieces. Wash thoroughly, using several changes of
water. When the spinach is sand free, put it in a pot and place the pot over a
low flame. The water remaining on the spinach from the washing is sufficient-it
may even be too much. The idea is to slightly cook and dry the spinach at the
same time. Stir frequently and press down with a wooden spoon in order to
squeeze out the moisture. Continue in this way until the spinach just begins to
stick to the bottom of the pan. This should take about 10 minutes.
2. Place a frying pan containing the butter and
olive oil over a low heat. When the butter has melted, add the parsley, onion,
and spinach. Mix well and cook for about 20 minutes. If you have done your job
too well in the first step above, the precooking of the spinach, you may need to
add a few drops of water at this point. You should have the mixture quite dry,
but not so dry that it might burn. After 20 minutes, set the pan aside and let
the contents cool.
3. Break the eggs into a mixing bowl and lightly
beat them. Combine the cooled contents of the frying pan with the eggs and mix
well.
4. Take a second frying pan and place it over a
medium flame. Add the butter and when it is bubbling nicely, pour the contents
of the mixing bowl into the pan. Cook as if you were scrambling eggs, using a
fork or spatula to scrape the eggs from the bottom of the pan. When the eggs
begin to firm up but are still rather runny, stop stirring and allow a crust to
form on the bottom. Work a spatula under and peek to see when the crust is light
golden brown.
5. Now comes the tricky part, turning the omelet.
The easy way is to have another frying pan buttered, warmed, and waiting. PIace
it over the first pan Iike a Iid and then in one quick movement reverse the
pans. Be sure before doing this that the omelet is completely detached from the
bottom of the first pan. If you do not have a second frying pan, try to flip the
omelet with two spatulas, or cut the omelet into halves or quarters and flip
each piece separately.
6. Brown the second side and transfer the omelet
to a warmed serving platter. Serve immediately. It may also be eaten cold later.

Ingredienti:
- 4 zucchine di grandezza
media
- 4 o 5 uova
- 1 grossa cipolla
- 1 gamba di sedano bianco
- olio extra-vergine d'oliva
- burro (eventuale)
- 1 spicchio d'aglio
- prezzelomo
- sale
- pepe
- grana padano grattugiato
Rosolate nell'olio misto al burro (o nel solo
olio) la cipolla ed il sedano tagliati fini e l'aglio schiacciato, che
ritirerete dopo che avrà insaporito il condimento. Badate che la cipolla non
dori troppo o, peggio, bruci, chè sarebbe indigesta. Affettate sottili le
zucchine, che farete cuocere al fuoco lento per una ventina di minuti nel
soffritto. Battete a parte le uova (quattro o cinque secondo la dimensione), con
poco sale e una bella cucchiaiata di grana grattugiato per commensale,
prezzemolo tritato e un paio di cucchiai d'acqua o di latte tiepido per aiutare
la frittata a crescere. Scaldate in una padella olio quanto basta a friggere,
mentre a parte unite le uova e il soffritto. Versate lentamente nella padella
bollente e fate rapprendere senza esagerare. E' il momento delicato di voltare
la frittata, che dovrà risultare soffice, alta e morbida all'interno. Se la
servite calda, ricordate di scaldare il piatto. E' buona, però, anche fredda,
magari ripristinando il vecchio panino con la frittata per gli appetiti
gagliardi delle passeggiate in montagna. Abbinamento del vino, Breganze Pinot
Bianco D.O.C.

Elizabeth
David talks about bruscandoli in one of her celebrated books. Some
misinformed person told her that they were wild asparagus - her subsequent
research showed that they were some kind of wild hop. I know them well
because they are among the first things to grow in Northern Italy.
Trust Elizabeth David to write about bruscandoli!
There seemed to be no secret safe from her inquisitive mind. Bruscandoli, I
thought was my secret. As a child, gathering bruscandoli was my favourite
occupation after school and the adults were always appreciative of my efforts.
Wild hops are pink when they first appear and turn green a little later. They
are beautiful to see and stir in me the ancestral urge to gather food. They are
also the base for the ultimate risotto or a great frittata.
In Australia, where bruscandoli do not exist,
wild asparagus make more than a decent alternative. I have seen them in city
shops, although very rarely. If you live in the vicinity of anyone growing
asparagus you are likely to find them because asparagus seeds travel easily and
grow almost anywhere.

Asparagus substitutes:
Ingredients:
- 16 stalks wild asparagus, or the standard variety
- butter
- olive oil
- 8 large free-range eggs
- 4 tablespoons parmesan cheese, grated
- 4 tablespoons cream
- salt and pepper
Preheat the oven to 180º C (350º F).
Trim and wash the asparagus and cut into small
pieces. Fry in butter and a touch of olive oil, gently until soft. Use a pan
that you can place in the oven.
Crack the eggs into a bowl, and mix with parmesan
cheese, cream, salt, and pepper. When well mixed pour over the asparagus. Stir
gently with a fork over a low flame - be careful not to damage the bottom of
your pan - until you see the bottom of the fritatta beginning to form.
At this point place the pan in the oven where the
fritatta will cook in about 10 minutes, try not to overcook. Remove from the
oven, run a spatula around the edges of the pan, tip it upside-down on a tray
and then upside-down again onto a suitable plate.
All fritattas can be done in this manner. Make
sure that you prepare the base properly. Cook it well so that you get a maximum
integration of flavours.
Serves - 4 (Preparation time - 15 minutes)

Frittata di asparagi pungenti [selvatici]

Ingredienti:

100gr di asparagi freschi

60gr parmigiano

1 rosetta

aglio

prezzemolo

olio extravergine di oliva
Immergere la rosetta in acqua
per ammorbidirla. Lessare gli asparagi. In un altro recipiente sbattere le uova
con il formaggio grattugiato e il prezzemolo. Unire a questo preparato gli
asparagi, il pane strizzato ed amalgamare. Il tutto si posa in una teglia e si
inforna a
180°C
